A really simple corn salsa, perfect for taco night or with chips for a snack!
12 oz (1 bag) frozen corn kernels
1/4 red onion, diced small
2 roma or vine ripe tomatoes, cored and diced small
1 lime, zested and juiced
2 tbsp cilantro, fresh, chopped
1 tsp salt (or to taste)
2 tbsp Kickstand Hot Sauce (or to taste)
Combine all ingredients in a bowl and serve. Can be held 1-3 days in the refrigerator.
