Ingredients:

12 oz pasta (we use penne)

1 lb smoked sausage, sliced

2 tbsp olive oil

1 tbsp Olympus Mons

1 cup heavy cream

1/2 cup grated Parmesan

1 cup diced or crushed tomatoes
Instructions:

Cook pasta according to package instructions. Drain and set aside, reserving some pasta water.

Heat olive oil in a skillet and sauté sausage until browned. Add Olympus Mons and tomatoes.

Stir in cream and Parmesan, simmering until thickened. Add some of the pasta water if needed to achieve your desired consistency. Toss with penne and serve.
